Citric acid can be used as an effective preservative, keeping fresh fruit from oxidizing or regulating the pH levels in canned goods. Added as a coating on candy for increased sourness, salt substitute, or as an emulsifier. It also has uses outside of food applications like using it as a cleaning agent.
