Dutch Process, or alkalizing, is the process of making the ground cocoa beans less acidic prior to pressing out the cocoa butter using potassium carbonate. Alkalized cocoa is darker in color (reddish brown) and has a more mellow flavor often associated with an earthy flavor. While alkalizing improves the taste and makes it easier to mix into most liquids, its low acidity doesn't react well with leaveners like baking soda.
