Also know as lentilles du Puy, they are one of the world's finest legumes. Of the the legumes and nuts, lentils contain the third-highest level of protein. Best enjoyed in soups, salads, and side dishes.
Cooking Instructions:
- Bring to a rapid simmer, and then reduce the heat to low for the rest of the cook time.
You want to see a few bubbles in the water with slight movement. They plump up nicely without splitting the skin or becoming mushy.
Cooked French lentils can also be tossed with olive oil, salt, and pepper, then roasted in the oven.
